Well, for every One Penicillin, One Tree cocktail sold, a tree sapling is planted in the Kalimantan forest in Borneo, Indonesia. We love a cocktail with a purpose, and the sustainability and accountability ethos of the bar is proven time and again.

One Penicillin, One Tree
- Mackintosh Scotch whisky fat-washed with white chocolate
- House-made strawberry brine
- House-made coconut kefir
- Strawberry- and papaya-seed leather
- Egg white
Shaken and stirred over ice. Serve in a clay vessel. Penicillin uses a frozen avocado seed instead of ice while serving the cocktail (waste not, want not!).
